Celiac Disease is an inherited condition that causes the immune system to react to protein fragments in grain, and to go on and disturb the structure and function not only of your digestive tract, but also of most other systems in your body. It is a model of the abnormal interaction of the individual (all of the genetic and behavioral background), and everything in the environment. In my practice and at California Pacific Medical Center, Celiac Disease is a major clinical and research focus.
